Lemo’s Marinated Salad Approx. 1 Tblsp. melted coconut oil* 1 Tblsp. coconut butter or 1 Tblsp coconut creme powder* (optional) The juice of one orange 1 oz of sundried tomatoes 1 English cucumber chopped 4-6 sundried tomato stuffed olives (Whole Foods olive bar) 6 peppadew red marinated peppers (Whole Foods olive bar) chopped carrots 2-3 chopped green onions approx 2 Tblsp. chopped cilantro chopped tomatoes 1/3 to 1/2 cup chopped red, yellow or orange peppers chopped celery (optional) chopped avocado added just before serving (optional) chopped mango also adds a nice flavor Serve on romaine leaves as wrap or chop lettuce and add to marinated mixture. Spread the lettuce leaves with hummus for an added treat. May also add spinach. I warm my coconut oil and then add the juice of the orange and cut up my sundried tomatoes to let them soften while I’m chopping the rest of the veggies. Coconut oil remains in solid form below 78 degrees, so it wants to solidify when you add the cold veggies to it. This is why I make it in a glass bowl and insert it into a larger glass bowl with warm water. You may have to replace the water a few times to keep it the right temp. Stir it the mixture occasionally and let marinate for at least an hour. 2 is better. It’s a lot of chopping, but well worth the effort! Enjoy!
